Ingredients
- Garlic clove (3 unit)
- Plain flour (50 gram)
- Aubergine (1 unit)
- Olive oil (1 glug)
- Houmous (1 dollop)
- Halloumi (56 gram)
- Baking powder (1 gram)
- Yoghurt (50 gram)
Method
- Combine the flour, yoghurt & baking powder.
- Cube the aubergine, salt and place in a colander for about 20 minutes.
- Knead the flatbread dough a bit.
- Preheat the oven to 180°C.
- Crush the garlic.
- Dab the aubergine with kitchen roll to remove moisture, toss in oil & the garlic and roast.
- Preheat the cast iron pan on a medium-high heat & form the flatbread.
- When the aubergine is nearly done, fry the halloumi.
- Cook the flatbreads & serve.
