Method

  1. Heat cast iron pan over medium low heat.
  2. Once pan is heated pour olive oil into the bottom.
  3. Add tomatoes, garlic & salt. Avoid moving the tomatoes or they won't char properly.
  4. Cook until garlic begins to brown and tomatoes begin to char on bottom, about 10-15 minutes.
  5. Once tomatoes are charred, pick out the garlic and place them in a small bowl.
  6. Toast the bread.
  7. Pick out the garlic, remove the husks, crush and then chop.
  8. In a small bowl mix the ricotta and garlic.
  9. Paste the ricotta and garlic mixture on the bread.
  10. Use a fork to pick out the tomatoes and place them on top of the bread.
  11. Pour the juice in the bottom of the bowl on top of the tomatoes.
  12. Pour another few drizzles of olive oil on top.
  13. Tear apart the fresh basil into pieces and place on top.
  14. Grind black pepper on top and finish with more salt to taste.
