Ingredients
- Olive oil (1 glug)
- Sweet potato (1 unit)
- Kale (1 handful)
- Pie (1 unit)
Method
- Preheat your oven to 180°C. Place a large baking tray in the oven.
- Cut the sweet potato into halves, toss in oil, salt, paprika.
- When the tray is hot, place the sweet potato cut-side down in the oven for 10 minutes, until soft.
- Add the pie to the oven.
- When the pie & potatoes are almost done, add the kale to a bowl with a bit of oil & gently squeeze it to coat the leaves in oil, then toss with salt.
- Turn the oven off, and get the potatoes out into a bowl. Peel them and then mash the flesh.
- Serve.
